Spring Salad for Liver Health



This salad is the perfect choice for transitioning to more fresh, light foods after the cozy, nourishing soups and stews of winter. It contains ingredients that are seasonal for spring and has elements to promote Liver health. In Chinese medicine the spring is associated with the Liver, so it is a great time to promote health and detoxification of this organ. Spring is a time for renewal and regeneration, this salad will leave you feeling refreshed and ready.


Baby Lettuce Spring Salad

~ 10 cups of fresh baby lettuces and greens, especially good if you add some bitter ones such as dandelion or mizuna

~ 3 radishes, thinly sliced

~ 1 large handful of pea shoots or 1 cup sliced snap peas

~ 3 scallions, chopped

~ 1/4 cup walnut pieces

* 2 tbsp rice vinegar

* 2 tbsp sesame oil or avocado oil

* 1 tbsp raw local honey

* 1 tbsp lemon juice

* small handful of chopped fresh mint

* salt and pepper to taste


Assemble all ingredients up until the * in a large salad bowl. Whisk remaining ingredients into dressing and drizzle on top.
